National Vegetarian Week* (final update)

*Our vegetarian week was actually nine days as we included the weekend before as well.

 

For the past nine days we have eaten entirely vegetarian food at home. I have been completely vegetarian, as have hubby and younger son who has been choosing vegetarian options at school.

To engage the boys more, and help them to really think about whether they liked vegetarian food, I chose new recipes which we each scored out of 10.

These are our homemade main meals for the week with scores:

1st place with an astounding 40/40 was the Cheesy Lattice Pie – extremely worthy of the top spot, served with Dauphinoise Potatoes and Green Beans, this was an outstanding meal. My older son immediately asked if I would make it again!
2nd: Noodles in Spicy Peanut Sauce
3rd: Jacket Potato with Cheesy Leeks
4th: Cajun Quorn with Coriander Rice
Joint 5th: Tofu with Coconut Rice / Sweet Potato and Chickpea Tagine
7th: Gnocchi with Spinach and Tomato Sauce
8th: Quorn Chilli Tacos

And at the very bottom was the one freezer meal of veggie pizza and garlic bread with only 29 points… proof that homecooked is best!

I will definitely be repeating Vegetarian Week over the school summer holiday and hope to involve the boys in choosing the menu and cooking meals.

    Good for you for going veggie this week. We need more incentive to do this, for the planet’s sake. 🙂

      Thank you. I used to be totally vegetarian because “little lambs are so cute”… well, I was a teenage girl at the time. Tbh I probably only eat fish or chicken a couple of times a week anyway, I eat veggie sausages, quorn and tofu more.
      The fact that the whole family were happy with being vegetarian has made me think that going that way is feasible!
