Today, being the 31st of January, is the last day of Veganuary and in typical me style I’m ending on a high. I am creating the most delicious vegan feast possible… ok bit of an exaggeration but I’m going all out to show that vegan food can be as good as non-vegan.
I haven’t yet decided on a main but my coconutty adaptation of this chocolate mud pie is a sure winner. I made the base with coconut ring biscuits, oats and sunflower margarine – I didn’t add sugar to the base as I didn’t think it necessary. My topping uses silken tofu, plain chocolate, creamed coconut, sugar and a reasonable sized glug of Malibu… and yes I licked out all the bowl, all the spoons and oh my am I in heaven?!
