NVW day 1 update

Good morning, and what a lovely morning it is here in my little corner of England!  Here’s my first daily update on my going vegan for National Vegetarian Week challenge.

Firstly, I did it and I lost an impressive 1.5 lbs.  I know weight loss has an intitial boost on starting a new healthy eating kick but even so I’m very pleased with this.  Part will be through diet and part through exercise as yesterday was an active day.  I walked 5 miles and ran 4 miles, so my calorie expenditure was higher than an average day.

Vegan day 1 was easy as I had a pre-made (leftovers) vegetable and chickpea curry which I served with brown rice for our evening meal.  This was enthusiastically demolished after an intense workout at running club track night.  For lunch I made some sweetcorn and spring onion fritters which I served with salad and a Newman’s dressing, and breakfast was my usual no added sugar muesli with banana and unsweetened soya yoghurt.  I also had some nuts and a pear mid-afternoon and some Nairn’s stem ginger oat biscuits in the evening.  All vegan, all low or natural sugar and I wasn’t hungry at all throughout the day.

This morning I woke early, 5am, with a rumbling tummy but I managed to go back to sleep and get up at a more sensible time for breakfast at around 7am.  However, I’m still hungry and wondering what to have for second breakfast… if it’s good for hobbits, it’s good for me!
