Day 5

My resolution is holding strong, at least it is now the weekend is over! I started my reset diet last Thursday with an aim to lose 7lbs by 13th October. Thursday/Friday went really well and the numbers on the scales had already started going down, but then on Friday night I made a pound loaf (cake), and by Saturday evening we had eaten it all. And then on Sunday I made a plum crumble which we had with custard (vegan of course). So, while I didn’t quite undo all my progress, it came close.

One thing I want to get into is meal prep, where you prepare all the component ingredients that you’ll need for the week on Sunday, so chopping veg, pre-cooking grains etc. Then on any specific day all you have to do is throw it all together, sounds like a great plan however even with a very good book (Vegan Meal Prep by Robin Asbell) to guide me I find the prospect of meal prepping for an entire week too overwhelming.

Something that comes close however, is to prep a salad for my lunches for the week. This week I have quinoa tabbouleh: I used a little over a cup of mixed quinoa cooked in 1.5 times the volume of water, to this I added chopped yellow pepper, cucumber, black olives, avocado, lemon juice, fresh mint and fresh parsley. I made this on Sunday and it will easily last until Thursday.
