Courgette cake (vegan)

Now I know that carrot cake is an actual thing, but so is courgette cake.  I have known of the possibility of putting courgette in cake for a long time but I don’t think I’ve ever done it before.  Or if I have it was so monumentally lacking in the Yay or Yuck factor that I’ve forgotten all about it.

This morning I took all the veg out of the fridge to contemplate what (healthy thing) I was going to cook for the next day or so.  Celery, cabbage, onions, leeks and courgettes.  Hmm nothing inspiring popped into my head, so decided on courgette cake.

The problem with, ok one of the problems with, me maintaining a lower weight than what I am currently is my appetite for cake.  Cake being a less than healthy meal!  But obviously if you put courgette in it, it automatically becomes more healthy.  My family are also similarly blessed with a love of cake, but also with a faster metabolism than me.

Internet research complete, I decided on two recipes:

A lemon and courgette loaf (as I also had two lemons in the fridge)

And a chocolate sandwich cake

With a few tweaks, my lemon and courgette loaf cake is in the oven and I have enough grated courgette left to make the chocolate one also… can’t wait to try them!

    1. It was really nice, it rose well and was a good sponge. Me and hubby didn’t think it was lemony enough, next time I’ll use the zest of two lemons and replace some of the syrup or oil with lemon juice.
